Amy's Corn Dip (stolen from Jane)
- 1 bag frozen white shoepeg corn
- 1 8oz block of cream cheese (can substitute for low fat)
- 1 stick of butter (can substitute low fat)
- 1 jar of jalapenos, chopped
- 2 teaspoons Cumin
Cook corn according to package. Mix butter and cream cheese together in sauce pan over low heat. Add corn and mix well. Then stir in jalapenos and add cumin to taste. You can double the recipe. Serve with bite-size Tostitos...Enjoy!
